Tofu (Soya Paneer) Scramble

Serves: 2

Ingredients:

  • 1 teaspoon olive oil
  • ¼ cup onions, chopped
  • 1 cup red and green capsicum
  • 1 cup spinach
  • 1 cup carrot
  • 250 gm tofu, crumbled
  • Salt and pepper, Oregano, Chilly flakes, to taste
  • Cashew nut, peanut, to taste

Directions:

Heat oil in a pan, add onions, carrot and capsicums. Sauté until vegetables are softened. Add spinach, crumbled tofu, oregano, chilly flakes salt and pepper. Add cashew nut and Peanut for taste. Cook for a few minutes on medium heat and serve.
